This potato-cheese soup was served at our Relief Society Inservice meeting, and several sisters asked for the recipe.
Potato Cheese Soup
5 cups potatoes, diced
1 cup celery, diced
1 cup onion, diced
32 oz chicken broth
1 quart half and half
3/4 cup flour
1/2 cube butter
1 tbsp. salt and pepper
8 oz. Velveeta cheese
Add potatoes, celery and onion and chicken broth to pot. Add a little more water if needed to cover. Simmer until tender. Do not drain.
In another pan, melt butter, stir in flour, add half and half, stir with whisk over medium heat until thick. Add this mix to the potato mixture. Cut up cheese and add to soup. Stir and allow time for cheese to melt.
This is even better the second day!
